"I will always remember the very first time I visited the Bachès Citrus farm, ten years ago. It was eye opening and allowed me to reinvent my profession, to understand the work of  producers, their passion and the time they dedicate to their products. A sincere and lasting relationship quickly established itself with Perrine and Etienne. We exchange a lot on the typicity of each variety of citrus, of which fruits are available at a precise moment and what is the optimum ripeness stage for my pastries.

The mandarins of Eus of Perrine and Etienne have a very powerful taste and the peel is very fragrant. I therefore thought it could be interesting to use it in its entirety with the peel.
