"Over the last months, we discussed how to pool our skills to overcome the consequences of the health crisis. This has led to a fruitful cooperation and I am really delighted to sign this recipe of processed citrus fruits which take us to the heart of the collection of citrus fruits from Perrine and Etienne. The Yuzu in particular takes me back to the years I worked in Japan. It is a very powerful fruit that I like to use in baking when it is very ripe. On the terroir of Eus, its skin becomes intense yellow, its taste becomes very round, soft, generous. I decided to create a yuzu marmalade, embellished with vanilla from Madagascar. " Claire Heitzler
